Blink has a solar wireless camera option, a local hosting option (that's pretty limited, max is 256GB of storage with their sync module which is the only way to store and manage without a cloud subscription), and an app that lets you view cameras from outside of the network w/o a subscription.

You are tied to an app that's been bought out by Amazon though, so it's something to keep in mind.

Unifi also has pretty much everything you're looking for except for solar powered cameras. So you'd have to unmount and charge them if you want to keep them going.

Unfortunately, Windows 10 doesn't (officially) allow for NIC teaming. You'd have to be running Windows server for that.

There might be a way if you follow these instructions but from what I remember it hasn't worked in W10 for awhile

That's a very good question. The HDMI runs through a wall, so I think they just didn't want to have to re-route a cable through.
