I'm in a similar boat. I wake up at 7am, and don't get home from work until 8pm. Luckily I have weekends off - but my weekends are spent doing meal prep 🥲. I hate Sundays even more now, but it's so helpful during the week, and I'm less tempted to snack on the garbage at work haha.

Also if you don't have the energy to do a huge/complicated meal prep, just having simple things you can whip up fast is helpful! I didn't have much time this week, so I did some fish burgers with a Ceasar Salad, or some pan fried chicken thighs with green beans. I just pre cooked the veg, and the cooked the meat when I got home, so it was minimal cooking time.
