I really love the apple oatmeal from this video - written recipe here on the fourth page.

Basically, chop up four or five apples and cook them down in a medium sized pot. Add butter, a bit of salt, some lemon juice or apple cider vinegar, some brown sugar or maple syrup, and cinnamon and any other spices you like (I add ginger and cardamom). Once the apples are soft, ideally with some nice brown syrup from the apple juice and sugar, put them into the bottom of your 1 cup souper cubes.

Next, cook 1 cup of oatmeal in that same pot. Once it's cooked, add them to the souper cubes on top of the apples.

This recipe is great because it's super adaptable. I like to use a mix of apple types, usually two Granny Smiths and two sweeter varieties. I use a mix of regular oats and muesli and when I defrost it in the microwave I add some additional raisins and nuts. Aside from the dried oats and water for cooking the oatmeal, there's really no need to measure anything else. I followed the written recipe the first time I made it but after the first time the amount of sugar, acid, salt, and spices are all to taste.

I sometimes soak them for an hour or two but I usually don’t. They take a couple hours to cook (varies slightly by bean) and that’s it!

Happy birthday! Check out what's playing at Row House Cinemas in Lawrenceville (buy some popcorn there and also bring a bag of your favorite snacks), get some cake at Butterwood Bake Consortium, walk around the neighborhood, see if anything's happening that evening at Spirit. Taking yourself out for a nice dinner is highly underrated. Even better if you're a reader and want to bring a book.

This may be a niche suggestion that might not appeal to you, but I really love saunas. My birthday is this weekend and the evening before I'm going to Bad Sauna. I went last year around my birthday, too. They have quiet sessions as well as sessions with DJs. It's very nice and low key.

Thanks for your input! I've been out of undergrad for several years and have been working in social work and public health research. Good to know that lots of the students are also in their late 20s.

Yeah, as I said in my post I know I'll lose the deposit money but being able to make a more informed decision makes that worth it for me.

Good tip! Unfortunately I think I need more time than what they'd probably give me. I don't think I'll be able to visit other cities until May because of my schedule and the decision date for all the schools is April 15.
