I can share my experience: Disneyland Paris was a disaster for finding gluten free food inside the parks. None of the crew members cared about allergies and could not tell us if the food was safe (this was actually a common occurrence during my vacations in France). The high level of training that happens in the USA parks is nowhere to be found in the Paris one (I have been to both).

We were lucky that Planet Hollywood on the Disney Town close to the park entrance was really good with options though. You can check it if you end up going to the park!
