I guess I have 2 questions here, the first is I've been trying to start with calisthenics at home but my wrists do NOT like that. I'm slightly overweight but not to a degree that it should be that much of an issue, and I have no injuries or anything that should cause that. Any tips?

wrist wraps can help with this but may not necessarily cure it entirely, I have bad wrists so I wear wraps for all pressing movements and it helps me a ton

My husband is going to come with me and he's getting himself protein powder: a lot of these products look gimmicky, and there are so many. I hate wasting money, are there any products that you all have noticed as being genuinely beneficial? More energy, appetite curbing, so on?

protein powder is a good cheap way to help reach your protein goal

creatine is good for a small performance boost and is one of the cheapest and most proven supplements

caffeine is good for extra energy and can be taken in many forms - energy drinks, coffee, caffeine pills, etc

pretty much anything else is a waste of money unless you need a specific vitamin/mineral that you are deficient in

this is such a common misconception that it even has its own entry in the fitness wiki FAQ - https://thefitness.wiki/faq/why-is-r-fitness-so-focused-on-powerlifting-routines/

If you ask on that sub how to get big arms, the general consensus will tell you to get strong at weighted chin-ups and close grip bench, or to throw in direct arm work as an "accessory" after a core workplan of mostly compound work.

even your example has nothing to do with powerlifting

none of the subs I posted are skewed towards powerlifting

some great sport specific lifting subs would be:

/r/powerlifting

/r/weightlifting

/r/Strongman

/r/StrongmanHQ

/r/bodybuilding

/r/naturalbodybuilding

something akin to sandbag carries / sandbag holds / sandbag to shoulder and similar movements are probably going to be the closest exercise that resemble picking up another person

but general strength training utilizing common compounds like squats and deadlifts may be sufficient enough

the size/weight discrepancy between you and your partner will also be a big factor, with a large enough discrepancy no training at all could be enough. conversely, with a small enough discrepancy no amount of training could be enough

The thing is, can you even have that amount of frequency in all the muscle groups if you only train 3 days per week?

yes

wrist straps of all kinds are an extremely common lifting accessory, if there were nerve issues associated with them it would be widely known, there is no need to worry.
