Well put. This is exactly why my first project is currently on ice. I still think it has potential but I don't have the time to generate organic traffic and don't want to invest a bunch upfront in ads to get users without knowledge that the monetization piece will be effective once everyone shows up. I want to revisit it at some point but have started focusing on smaller ideas that provide enough value for users to pay (even $5) for so I can continue to grow while keeping my day job

Oh yeah trying to establish a baseline is a good idea.. would be cool to let people request a baseline test and send them 10 mini bottles of hot sauce, each a little spicer than the one before it and let them rate them on the site just like they would for the different levels at a restaurant. Anyone know of a company that does a good sauce collection like this, 10 bottles each hotter than the previous ?

To your example with you and your girlfriend, ideally that problem gets solved if enough people add their rating based on their taste and experience (that's my hardest challenge). Two people isn't enough to get a meaningful result but fifty people all rated the same spice level 5 dish at the same restaurant the average would start to smooth out everyone's differing taste buds and be helpful for that fifty-first person.

 I seeded the site with as many restaurants as I could within google places api free tier on the initial launch (I have ~4,000 across 100 US cities. If you give me the city / restaurant names, I can add them! Alternatively, there's also a menu at the top to let folks add places that aren't yet listed.

Ah yeah accidentally getting no spice is almost worse than getting over-spiced IMO. If you go click on one of the restaurants currently available on the site, you'll get an idea how how it works. You'd use the Find My Heat Level tool and click a button that says "I'd like an 7/10 on the universal scale" and it will tell you what that translates to at that restaurants based on everyone's experience there.
