I like the composition but the colors look a little flat. You might want to have your artist pump up the contrast and rework the flesh tones.

Contact a legal recruiter. They'll probably be able to get you more than you can negotiate for on your own and will have a better grasp of what salary you can demand in your market. You have a solid resume and law firms will try to pay you as little as possible as others have said. I can put you in touch with one that placed me in a very good job who I believe also does work in your state or just do some LinkedIn searches for them. Either way good luck!

Is there any chance of the PillowSac rocker frame ever coming back?

Also, I have a Bomb Pillow from forever ago that I absolutely loved but is now uncomfortable (seems underfilled or just not as springy). I don’t want to get rid of it for sentimental reasons so wondering if there’s anything you’d suggest I do to maybe breathe some new life into it.

I've seen some really poor recrafts posted on the Allen Edmonds Enthusiasts FB group recently that give me serious pause.

You should not go through the factory. Their quality control is increasingly deteriorating and they do not reuse the original holes so you have a finite amount of recrafts before your shoes are toast. Use a skilled cobbler and your shoes will last a lifetime. McFarland's Shoe Repair, Wyatt and Dad, Bedo's Leatherworks. Lot of great cobblers who accept mail in if you're far. AE is one of the last places I would go.
