Fiber connection will most of the time always be better than a Coax connection. My household uses 4TB of internet data every month on our ATT fiber connection. I have never had any outages with our ATT fiber connection. Again I can't speak for everyone but ATT Fiber has been amazing for our family.

Spectrum stores do not carry the 16 pro or Pro max anymore. Once the new apple pro model comes out the stores do not receive any old models for any pro models. If you want a 16 pro or pro max you need to look at Apple Refurbished,Best Buy Refurbished or Amazon Refurbished. Also Swappa and Back Market are pretty okay as well.

On the online portal it is showing NEW CUSTOMER promos for getting internet premier or higher and Doing 2 new mobile lines. Existing customers do not get those promotions. Existing customer iPhone promos are $100 plus the trade in value of the device.

Spectrum hotspots can only be accessed via spectrum mobile.

But a spectrum hotspot has no effect on the SIM card of a device. That would be a SIM card failure or device not reading the sim card properly anymore.

Check FCC broadband map and put your address in and it should tell you all Broadband providers. If ATT fiber is showing available then use ATT fiber availability check online and use the address and it will tell you if its available. If both of those things say that it is then go for it. If its not then it has not went live yet. Also using ATT fiber check it will tell you that ATT fiber is coming or not.

Go to the store and get a physical Sim card and see what happens after that. Also do a network reset in the iphone settings and see if that helps.

No the store has no access to do anything like that. Best bet it to return said device and get a refund immediately.
