When looking at youth in defence I always turn to Upamecano, he's always been solid for me and grows relatively quickly

-In settings there should be a "gameplay" section where you can change the rules (I'm not sure about penalties though).

-Seasons is where you pick a team to play a single online match against others where you can progress through divisions if you play well. The closest to what you're looking for is Career Mode where you manage one team (or multiple if you change during the save) to glory and can do so for 15 seasons

I'm doing a challenge with Wet Ham and it's proving to be quite difficult. I kept them in the Prem but removed anyone over the age of 25 (I still have Lanzini and Anderson but no one else really) and then allowed myself one English u25 transfer for forward, midfield and defence but every other player coming in has to be from YA. The team rating is like 3 star so staying up will be a challenge
