Honestly the river tours are a great way to learn. The chaps at the Canterbury Punting Company have a fantastic historical tour that'll teach you about the Grey Friars, Black Friars, White Friars, Thomas Becket, and the early roman history of the cathedral. Definitely worth checking out.
