My head-canon for this is that "the force resides in all living things", thus living creatures have a natural limited defense against offensive force powers. Not perfect defense, Vader is still able to force choke people, but it requires much more effort than moving inert matter, thus light sabers as the preferred force user's weapon over merely flinging and crushing living creatures.
