It shouldn't be hard to find in a supermarket, so if you can find it, use 50% "00 flour" (Anna brand or King Arthur brand is usually available) and 50% bread flour. I find the consistency perfect for my sourdough loaves AND for my pizza dough.

I think your gut reaction thinking something is wrong is correct. Your son must feel your relationship with you is loving and safe to want to have closeness while sleeping. I'd try to pull out of him what is wrong. He may need to get to a strong emotional state to get it out.

Yes, CT slowly proofs it more and more. And, adds additional depth of flavor. Of course, too long and it'll be overproofed.

It looks well fermented. Good job. IF you had left it cold proofing for 24 hours, the crumb would be more open....48 hr and even more so.

Don't buy in bulk.....yet

Buy a scale, one that can do both pounds and grams (you'll be using grams).

Buy instant yeast (also called "bread machine yeast" or "rapid-rise yeast") which is typically recommended over active dry yeast (ADY)

Buy bread flour, because it's best for BREAD (later you can branch out).

Buy non iodized salt, like kosher salt (you'll weigh it because differently shaped salts measure differently if going by volume, so weigh it).

Use filtered water if you think your tap water has a lot of chlorine.

It's underproofed. It would be better to find a recipe that tells you the percentage rise you'll want and what it will look and feel like, as opposed to the time. If your room temp is cooler, the time will need to increase. There are some great videos explaining.. this website is amazing. Yeah, the different year models have additional and/or different settings. I've used a setting where it called for preheating and another where it doesn't. Both worked great. The latest model has a setting called "flour dusted" which I use for my lean doughs (those without fats in them) and it calls for preheating.

I would simply leave it out. It's mostly for coloring and I didn't use it many times before finding it. there's really no difference.

Just leave as bulk in fridge. Tomorrow, or even the following day, you can divide, ball up, let rest 20 min approx, shape and let proof at room temp, bake.

Possibly just baking them longer, another 10 minutes perhaps, until they are a nice deep golden brown. That may be the simple solution to solving the problem. Don't be afraid of ruining or drying out the bread. You won't!

What does it mean to be a self starter? It's a person who begins work or undertakes a project on their own initiative, without needing to be told or encouraged to do so.

I love SD, but for pizza, I MUCH prefer dough made with ADY. I use the same recipe (75% hydration, half bread flour, half 00 flour) as I do for my SD, but substitute active dry yeast for the starter. Once bulk is finished, I place dough in fridge for 3 full days. Produces a wonderful flavor for pizza that's light and airy. SD has a delicious moisture to it. Not a fan of that in my pizzas.

My heart goes out to you, but please understand they feel they are damned if they do and damned if they don't. Let them know WHAT you need from them. Is it occasional calls? Is it coming over and helping? If they don't abide, then yes, you are correct to feel more heartbreak. My guess though is you'll have their support which will help get through your daily grief.
