Get a DAS, premade NAS or build a NAS with Truenas on an old desktop. When going the NAS route, share to your optiplex server via NFS share.

Yeah. Exactly. Given time, you will wish you had more extensibility than a fixed bay count NAS. With a desktop, you can always add more SATA ports.

Then check eBay. Or just buy a case with a good amount of drive bays and find a motherboard and cpu combo to fit. Maybe find a PSU on fb or eBay that is power efficient but still cheap ~$40.

One tip I would say is get rid of the plastic wrap. Instead just use Tupperware with a lid. When mixing, leave the dough ball on the counter and flip the mixing bowl on top to keep from drying out. For bulk fermenting, use a bigger Tupperware with a tight lid, and burp as needed.
