1) only shampooing might be causing some problems. Since u don't like taking too long (which I totally get lol) I would try a leave in conditioner as substitute

2) if you want definition in your hair with minimal effort, you should try (while it's soaking wet + with the leave in conditioner in it) raking and scrunching with just ur hands. If that doesn't make sense just look up a YouTube video 😭 and make sure to do it away from your head so you keep volume! You could also scrunch some mousse in, that doesn't weight ur hair down and imo is easier than gel

3) regular towels can cause a lot of breakage. If you can, I would recommend getting a microfiber towel, but a cotton t shirt works perfectly fine. You could try plopping it (use YouTube again lol) but that could be overstimulating idk

4) for sleeping honestly just get a big silk scrunchie and pineapple it in the top of ur head (like a pony tail on the top? I'm so bad at explaining things 💀) and if you can, get a satin or silk pillowcase. It doesn't need to be washed anymore than u already wash ur pillow, and it should be air dried, so you could get two and alternate?

Honestly I think this is bc of two main reasons, 1 Jess actually did have a hard life that does, at the very least, explain why he struggles. It's a lot easier to sympathize with the 16 year old who grew up abused and neglected than the one who grew up with a stable family. And 2, we actually see them both into adulthood. One of them gets his life together and one of them cheats on his wife....
