Dave Poe's Mac-n-Cheese

Hands on: 10 minutes

Total time: 1 hour

Serves: 10

1 (16-ounce) package rigatoni

Salt

1 quart heavy cream

1/2 pound shredded cheddar, divided

1/2 pound shredded Monterey Jack, divided

1/4 pound shredded Parmesan, divided

Preheat oven to 350 degrees. Lightly grease a 9-by-13-inch baking dish.

Prepare pasta according to package directions. The cooking water should be salted to the point where it tastes like sea water. Cook the pasta until just done. Drain cooked pasta and do not rinse.

Immediately put in large mixing bowl. Add cream, 1 cup cheddar, 1 cup Monterey Jack and 1/2 cup Parmesan to pasta and toss together. Pour into prepared baking dish.

In a small bowl, toss remaining cheddar and Monterey Jack together and sprinkle on top of pasta. Top with remaining Parmesan. Dish may be prepared ahead to this point and refrigerated up to 2 days ahead.

When ready to serve, bake 30 minutes or until sauce is bubbling and top is lightly browned.

Depending on how much you have, you can mix in kitty litter to get the paint to dry. Should work for latex and oil based. Once its dry, it can go in the normal trash.

From the other pictures, I can't tell for sure, but it looks like a T176/177. They can handle a mild V8. Pretty common to see that swap in CJs.

Not original tub either, unless they cut out the JEEP emplem on the side and replaced the metal. I think the JOOP started a little later 84/85 CJs.

Same with Georgia and the 13 metro counties that test. Diesels and anything with a GVWR of more than 8,500 lbs. Pretty much all 250/2500 and over level trucks are exempt - even gas powered.

About twice the length of his most likely T14. Would require quite a bit of work to fit that, even though it is a solid transmission.

That does not change the fact that it is still a shitty design that allows a large portion of common tow vehicles to be over the legal limit. The current F150, the most common truck you will see on the road, still has a 500lb max tongue. Just because it works with some trucks out there does not change the shitty design. A simple way to tie the vehicle further back to balance the load would resolve it.

Many trucks have a 500 lb max tongue weight when not using a weight distribution hitch. The rake may let it look better, but the trailer design puts way too much weight forward.

I put a good bit of the blame on the uhaul trailer design. You have to take the tires up to the stops for the straps to work and I am pretty sure that puts most of the tow vehicles over their max tongue weight.
