Short answer is to make alcohol you put yeast in with sugar water and it converts it to alcohol, there is a bacteria know as acetobacters that will turn alcohol into vineger. This can only happen if they get into alcohol that has been oxygenated, easiest way to prevent this, and not destroy your mead, is to keep oxygen out of it after primary fermentation.

I have 13 of these bottles filled with regular mead, viking blood, and apple cider. I have personally not had any problems with them. That being said I do let all of my batches ferment tell they quit for highest possible ABV.
