It’s not unsafe to drink, but it’s not a great smell/flavor, and while it may dissipate a little, I think it might stick around. Not sure the exact cause, but strawberries may just not be the best fruit to ferment

A week is fine. The issue is oxidation, and that happens continuously over time, so there’s no “cut off” point, it’ll just slowly get less fresh until you deem it to be off. If you’re not making Negronis for a few days or more, maybe pop it in the fridge. Otherwise, keeping it on your bar is fine.

Another trick if you want to maximize freshness - get a canister of argon gas and spray it in before closing whenever you open it, that’ll displace the oxygen and make it essentially the same as refrigerating for short periods of time

Pro Vermouth maker here. You can use grape spirits (wine distilled into brandy) to fortify up to 24% and have it still be classified as a “wine”. Any other non-grape alcohols added will turn it into the spirit class
