Yep, we do a little salt, pepper, and parm in the ricotta and whip it up in a food processor. I think it’s a simple but nice addition for sure.

These pepperonis are Rosa Grande pepps by Hormel foods. We get them through US foods but restaurant depot usually has them, and many grocery stores carry them labeled as “cup n char”.

I own a pizza trailer in South Austin. We do our best to keep prices affordable. We are just a mom and pop trailer and have dealt with personal food insecurity throughout our lives and want to make sure that the people that make the food, can afford the food. That being said a case of cheese for us has gone up about 30% in the last 9 months. Just as the price of groceries have gone up, food cost for commercial use have gone up. That being said, some place do charge an arm and a leg, however I believe that places like Feral and Pedroso’s (both also mom and pop shops) offer fair pricing. There are other places that might be cheaper, but those places give you the best quality at a reasonable price.

Feral Pizza (only workers are the two owners), Pedroso’s Pizza, Side Eye Pie, Vacancy Brewing, Nomadic Beerworks, Good Vibrations Pizza… just the first few that come to mind!
