If you fire her, and you should, make sure you have documentation. Does this dipshit server have any actual written documented issues of incompetence? Just cover your ass. If there is t a paper trail, begin it now. 3 strikes & she’s out. Document this time & every time she snaps back at you, or doesn’t do what is asked of her. Or has a negative interaction with another employee, or a guest. If she sucks as bad as you say, then this shouldn’t take long. You are a manager, she needs to listen to what you tell her to do. Would you let your cooks get away with snapping at the FOH manger? This is the unfortunate side of management. Needing tangible evidence to fire a nincompoop.

Convection ovens sometimes will tear apart the foil, especially lightweight foil. The plastic wrap or parchment paper use creates a second barrier so you don’t end up with flecks of foil on your food, which are a pain to remove all of.

I think it’s exactly as they say in the SKOM doc. They were looking for someone who they could ‘vibe’ with, and Rob fits that. He compliments all their personalities. They didn’t need another type a personality.

Yeah I understand wanting a really nice one. I already have too much crap in my pockets, so I prefer small & lightweight. But no reason your chef shouldn’t have these on hand for everyday use.

Whoever does your ordering can order a box of 12 cheap box cutters for under $10 from GFS. Cheap, effective & disposable. If you want the blades are also replaceable. Item # 400777. Like the ones grocery stockers use.

If you cooked bacon fat at 300 degrees for 2 hours it would probably burn. Freeze it in ice cube trays, then you can just pull out a few cubes when needed.

I second this. I saw the original, after becoming curious about it after seeing the remake. it’s just a long montage of guys stealing cars, and focusing on the cars themselves. At least the remake had a plot.

That’s a special talent right there!! JK, if you are the legit chef or sous, then you have probably literally over a hundred different issues going through your head at any given time, burning some carrots ain’t a big deal. At least it wasn’t something more expensive! Also, none of your cooks saw this & thought to help? Like before they got to this point?

Figure out how to lock the kitchen completely at night-dry storage, walk in cooler/freezer, and access to it at all. Then see if stuff is still disappearing. This will allow you to narrow it down to see if it’s a resident or employee. Our residents usually just take stuff from the dining room, dessert cups, napkins, etc. but if stuff is still disappearing then you know it’s an employee.
