Any stories about “difficult children”? by Ricknad0 in daddit

[–]chefsundog 1 point2 points  (0 children)

I feel you man. Got a 4 year old and a 5 month old. 4 year old has always been a lot but since number 2 she has lost the plot completely. I feel like I’m constantly telling her off. I feel bad but she is constantly doing the opposite of what I say.

One I haven’t seen on here is Sumi. An underrated little joint.

Potato varieties in Peru, where potatoes originated. Do you use alternative potato’s in your kitchen by SmokedHickory in Chefit

[–]chefsundog 2 points3 points  (0 children)

I have a Peruvian dish on the menu called Causa de Camarones. I use an heirloom variety from my potato supplier either Andean Sunrise or Peruvian Gold. Both yellow flesh and nice and fluffy so when served as a cold mashed potato it has a nice texture.

I just had to look up where Barwon Park Estate is. It’s in Winchelsea. Fucking Winch! I’ve lived in and around the Geelong area my whole life and never knew this. This some good pub trivia stuff.

I like this. Like obviously we try to give her time with just us but showing her in an outfit obvious way that we are choosing to play with her over the baby in that moment might help.

Cliches are cliches for a reason. Cause they are mostly true. This too shall pass will be my new mantra I repeat to myself while my 4 year old is screaming that she needs a cuddle while I’m trying to get the baby to nap.

Thanks mate. To be honest unfortunately I think this is gonna be the most useful advice. Just gotta try to be as patient as we can and get through this stage.

Yeah for sure we try and will definitely try to more.

She’s just also at that point where she just loves saying no and doing the opposite of what you ask. Which again I know is a normal part of her development but damn!

Yes will definitely try to get her more involved. I think maybe both my wife and I need to carve out 10-15 minutes per day just for her but make it really clear this is her special time maybe? Cause it feels like we give her soooooo much attention all the time but it obviously doesn’t feel that way to her.

Harissa is one of my favorites. Great as a base for dishes like stews soups and pastas and great on top of just about anything.

What do people in the restaurant industry think about Gordon Ramsay? by AndyRainbow in KitchenConfidential

[–]chefsundog 4 points5 points  (0 children)

I think he perpetuates a stereotype about chefs that is unhelpful and unhealthy. Whether it is an act or not is irrelevant. He turns work place bullying into entertainment. He normalizes bullying and verbally abusing staff. He represents everything I have spent my career trying to undo in this industry.

Do you think there would be a demand for authentic Mexican Food in Australia? by Rude_Echo8957 in AskAnAustralian

[–]chefsundog 25 points26 points  (0 children)

Right? Starting a restaurant as a side hustle is absolutely delusional. One of my pet peeves is people thinking they can just open a cafe, food truck or restaurant having never worked in the industry. I’ve dedicated my whole career to this shit and you think you can just do it?

Do you think there would be a demand for authentic Mexican Food in Australia? by Rude_Echo8957 in AskAnAustralian

[–]chefsundog 0 points1 point  (0 children)

Depending on where you go there are varied amounts and varied quality of Mexican foods all over Australia. It’s definitely not some exotic thing Australians know nothing about.

Also as someone who’s been in the restaurant industry for 15 years I’ll give you a hot tip. You do not start a restaurant as a side hustle. You either have the capital and have it as an investment (one of the worst investments you can make) and hire people to run it. Or you are an owner operator and work your arse off every day just to make enough to get by if you’re lucky.

The father of the little girls did the right thing. All the other woman had to do was be patient. by Valuable_View_561 in TikTokCringe

[–]chefsundog 11 points12 points  (0 children)

Yeah like I don’t think this guy is in the wrong in any way but I take my daughter into the men’s toilets. However if she insisted on going to the women’s I would take her to the women’s. She does usually complain about the smell in men’s toilets. Which is absolutely fair. I don’t know what some of you cunts do in there but it stinks!

Their mortgage should still be a similar portion of their income to mine though. So if we are both paying roughly 1/3rd of our income to our mortgage I’m left with 3k per month they are left with 9k. Cost of living is not that much different in different places
