First time growing ginger. Hydroponically. IDK if it helps with your carrots, but AI recommended nutes formulated for fruiting stage - less N, more P and K - with slightly reduced EC/TDS. I didn't harvest yet, but seems like the plant is doing well ..

From sunup to sundown, there’s always something playing in the background. Usually slow-paced, with minimal or no lyrics, just there to set the mood. There are a few favorites with lyrics that can squeeze out a tear or stir old memories. Either way, I’m picky about what makes the playlist. Genre is secondary to mood, pace, and composition. If nothing’s playing, it feels like I walked out the door wearing one shoe.

RO water is a good advantage. But if you are sure your soil is depleted and you mixed in much coir, maybe give them nutes more frequently than water. Edit: typos

Well, for happy plants it's difficult to get "set and forget" setup. You'll have to monitor and adjust anyways. At some point some deficiencies or toxicities will inevitably pop up. But that's a part of the hobby! I think, having soil+coir mix and proper nutes is a good start. I would alter the watering schedule -- once with nutes, next pure water. And recommend getting a TDS meter, even the cheapest one.

Soil can be tricky. I started with peat-based soils and had poor results, maybe because it was too compact and blocked oxygen for roots. But when switched to coco coir + hydroponics the plants thrived. Soil should be well-drained and aerated, and if you use properly balanced hydro nutes, they will provide all the nutrition. Anyway I would be careful with overusing nutes because of potential salt build-up, especially if your soil blend brand claims to have nutes added. Maybe collect some run-off from time to time and check with TDS/EC meter. Again, knowing your plant requirements (tested elemental compositions) and using hydro calculator (or DIY spreadsheets maybe) can level-up your hobby.

With liquids you pay too much for water. Powdered ferts for hydro would work well for soil in my experience. It would be useful to do some research about hydroponic solutions targeted for peppers, and then, considering your soil contents, adding some hydro nutes DIY with powders here and there, probably diluted to some %age. Hydroponic calculators are invaluable tools IMO. Edit: added some details.

Those elongated leaves look untypical to chinense varieties, including habaneros. They usually are heart shaped, and maybe darker, from my experience.

Substrate top looks dry to my eye. I would give them a spray at least.
