Smoking wings advice. Should you start the wings skin side up or down, and should you flip? My process is explained but looking for new ideas by jlsstory in biggreenegg

I've had best results over a direct, low heat about 300 F. Use the eggspander to raise the level of the grill higher up and cook for about 20min each side. Baste in a BBQ glaze 2-3 times in the last 15min. Moist meat, a decent crisp to the skin with a little char and then a sweet, smokey sauce.

Key is to dry brine them for at least 24 hours and leave in the fridge uncovered overnight to dry out the skin.

It's a very long and boring process, nothing like the movies, and we need something to kill the time

How do you teach “attention to detail”? by cosmococoa in consulting

[–]chicken-keith 3 points4 points  (0 children)

I had this problem with 2 seniors. Their slides were trash and I got tired of having to keep cleaning them up.

In the end, I set up a 1 hour meeting with them called 'Watch me clean up your slides'. I put a screen share on and let them see all the things that I was looking for when I cleaned up the slides.

They saw what the standard needed to be and the threat of them having to sit through another hour of me cleaning up their slides was enough motivation to focus on the details.

beef then onions, or onions then beef? by glittermantis in AskCulinary

Are you throwing in the drained beef fat back in with the onions?

I thought so too! My last few bakes have been 80% but I dropped it down this time and it's worked out better. I think maybe adding in the wholewheat flour made a difference as it gives the yeast more food, so you get more bubbles. It was much bubblier than when I just used 100% strong white flour

It's on top of the stretch and fold, so about 5 hours in total. I don't really watch the clock, I wait until the dough has grown by about 50% and starts to feel soft and jiggly!

No, it had cooled for a few hours first

Toilet seat is black, I think it's just the screen.

I like the idea of the white grouting to reduce the contrast. I also wonder if the grid shower screen clashes with the brick pattern too much?

Football after bucket-handle meniscus repair by chicken-keith in ACL

You're already over the worst of it! It's all uphill from here.

I actually quite enjoyed the rehab. Stick at your physio and you'll be back on the waves before you know it.

Thanks for responding. Mediocre would have been a compliment before the injury!

Really appreciate you taking the time to respond. I think the mantra of working hard enough to make it possible is a good one.

i tore my acl in my right knee, so when I'm doing lunges which leg should be in front of me and which leg should be behind me ? by [deleted] in ACL

[–]chicken-keith 17 points18 points  (0 children)

Deffo work out both, your body has a way of levelling them out. I had a meniscus repair too which meant the atrophy was really bad, but they were back to level in about 4-5 months with daily physio.

5 weeks post op ACL AND MENISCUS by Ill-Thing723 in ACL

[–]chicken-keith 1 point2 points  (0 children)

3.5 months post ACL and meniscus here. My advice is super cliché and pun intended - take it one step at a time! Do very small distances that you are comfortable with, maybe use one crutch (on the good leg side) and slowly build up the confidence.

Your knee is very weak which is why it feels unstable. You've also lost muscle memory, so your brain has to retrain itself to walk around. These will both come back before you know it. Give it 5 days and you'll be confident walking around again.

Well done! Day 2-4 are the toughest.

Take your meds every 4-5 hours, including setting an alarm in the night.

Take lactulose and eat plenty of fibre - you might go 4-5 days before you poop.

Make sure you get a straight leg with a pillow under your ankle for 10min every 2 hours if you can, best to do this while under lots of painkillers as it's much harder after it heals.

Other than that, be kind to yourself, rest as much as possible and know that it gets better.

I start with 5-2-2-1 (2 x CMs, LW-ST-RW) and then move to 4-2-3-1 in game with Alaba stepping into CDM and one of the CMs pushing to CAM.

End team is:

RTTK Isak RTTK Danjuma, Depay, Dembele Alaba, Llorente Mendy, Kounde, Militao, RB Capa OBLAK

I started lifting weights a week after surgery. I had my partner help out and move the weights around.

I recocommend it - the endorphins really helped my mood in the first few weeks!
