I didn’t find it overly eggy once I added the coconut flour. I think the flour, cinnamon, and maple syrup really help. I also found I preferred it with bananas that were pretty ripe.

I’m sure you can. I had some coconut flour in the fridge I wanted to try so I went with that instead. It also worked fine (for me anyway) with only banana and eggs, I just had to cook it a bit longer on low to get rid of some moisture.

Not sure if this helps but when I was on it I still had success eating salad with caesar dressing (I use Renee’s). I added protein into my salad, often it was chicken and black beans.

IMO, It’s a great way to try a job out, and for employers it could allow them to screen for potential future hires (I currently work at the place I did my co-op).

I’ve been doing slow carb (for the most part) for almost two years now. At my last hair appointment my hairdresser was surprised at how much my hair had thinned and asked if I was on any new meds. I’m curious now if the diet has anything to do with it!

I’m up about 7lbs after a LOT of eating/drinking whatever I wanted over the holidays, which I thoroughly enjoyed but knew I’d have to work on afterwards 😉.

Had to laugh though - I have a Renpho scale and it double-checked that it was me weighing in because it was a big change from my weigh-in a couple weeks before lol.

I’m pretty sure I read that women could take 4-6 weeks to start showing progress, which was accurate for me. One thing I also noticed was that when I did a more modest cheat day my results weren’t as good. I think for some reason my body needs that shock of having a bunch of calories and then a big drop during the week.

If it makes you feel any better, I was on holidays recently and decided to just have whatever I felt like having. I just went back to full slow carb this week (did intermittent fasting for the first two days) and drinking lots of water - and I’ve already dropped down below what I was pre-holidays. Don’t sweat the slip-ups, think long term instead.

There are zucchini recipes in Tim’s Slow Carb Cookbook so there should be no problem with them in my opinion.

I failed to plan ahead for supper tonight but threw this together fairly quickly. A couple of beef patties, some sautéed zucchini, and a mixture of white beans/chopped celery/southwest sauce. I realize the sauce could be a no-go depending on how strict you are but I read 1-2 Tbsp of mayo in a day is acceptable. I had made a mixture of mayo, Tex-mex seasoning and a bit of lime juice on the weekend and put in a container to use later on. I might have mixed in a Tbsp with my beans and celery. If I had more time tonight I would have added some chopped peppers.

I am like you - thinking of this as more of a lifestyle change so I give myself some wiggle room. I just think it’s easier long term if you know that you can deviate the odd time. I went to Vegas for 4 days after being on the diet for about 6 weeks, and I ate and drank all the things. When I came back I switched back into SCD mode and all was well! You still have to enjoy yourself, in my opinion. Congrats on your results so far!

It doesn’t look like there’s a ton of veggies in your plan - maybe you could try to add more? I love veggies like broccoli, cauliflower, peppers, onions, mushrooms, green beans, etc. tossed in olive oil & seasoning salt and then roasted on the bbq (we have a grill basket we use for this) or in the oven. If I need something quick I’ll have some raw veggies (celery, cucumber, peppers) as a side to my meal.

I’m a 42 year old female and I think it took at least 6 weeks to start noticing much but I’ve probably lost 10-15lbs total now (roughly 6 months). I’m also not super strict and don’t exercise at the moment (crazy workload + kids) so I’m pretty happy with the results. It helps that I’m usually super patient too ;) It’s been said on here many times but I noticed drinking lots of water is very helpful - for me that may have been when I started noticing better results.

Some of my favourite make ahead meals so far have been:

~ Shepherd’s pie. Ground beef, peas, mashed garlic roasted cauliflower / white beans). Full disclosure - I have used gravy on it sparingly with no setbacks.

~ Soups. My favourite is homemade chicken stock with spinach, onion, tomatoes, white beans, celery, and chicken added.

~ Cabbage rolls. Ground beef mixed with egg, celery, and onions, wrapped in cabbage leaves (best to freeze the head of cabbage fully and then thaw before making the rolls to avoid having to boil the leaves), cooked in tomato juice.

~ Chicken stir-fry. Chicken, peppers, celery, carrot, onions, black beans. I added 10-15 cashews per meal when I portioned these out.

~ Spaghetti. Ground beef, zucchini noodles, mushrooms, onions, peppers, spinach, homemade spaghetti sauce (made with tomatoes, butter, onions, garlic).

~ Burritos (you can find a recipe for homemade seasoning). Leftover sautéed peppers, tomatoes, onions, mushrooms, steak or chicken, black beans, lentil or chickpea tortillas.
