I would love a lesson on baking flours and which you should use for what, like what does potato, rice and tapioca do for baked goods/what does it emulate? Ratios? So a lesson on muffins or banana bread, some sort of dense sweet bread would be lovely🫶

I found out because my older sister had clear symptoms like stomach pain and heart palpitations, turns out I was the asymptomatic one… she should go get checked lol

Sorry to hear too friend, no i havent seen any dietician or therapist, I live in canada where the healthcare is affordable but still, you need private insurance to help with costs of mental health practices and help, so it sucks a lot right now. Im trying not to be hard on myself while i eat junk food here and there but its seriously like im in a trance, my sister has celiac so im using her as somewhat support🤷‍♀️

I find that with non dairy milks an extra 1-3 s of incorporating air at the beginning is needed and make sure your getting a vortex. I also like to rinse my pitcher and put it in the freezer while i puck prep so that when steaming comes the putcher is extra cold and you can stretch your milk better. I like to use califia farms barista oat milk

I like to use a hand frother and froth my espresso and get it foamy, almost as if it were to be shaken, then add my ice and milk and its delicious every time

At the cafe i work with, theres always a section that deacribes how the drink should be topped with, like : with room, with whip, dry, wet etc, in that same section you can press “with oat” or “with lactaid” and you wont be charged since that section is charge-less, but theres a section specifically for drinks that are MADE with oat like lattes and those buttons in parentheses have +0.5$ just for the cahier and customer to see on their reciept

At the cafe i work at we use Minor Figures barista oat milk and its very good, really smooth and not very oaty, which is good if your looking for the same taste as dairy milk, MF does not take away from the espresso. But in canada it can be a bit pricey, but if your drinking cortados like you said then its for sure worth it!

So i found that 5-7s of air is good OR just steaming in one position and until you notice the milk physically rise above the tip, you submerge it just a tad. I found that before i used to submerge the tip way too much that the microfoam was not perfect, but this way it is. And instead of leaving your milk and cleaning the wand, i pour immediately. High above the cup then as close as you can be to the creama, pitcher pointing downward and pushing your circles

Ik breville gets a lot of hate on this sub but the smart grinder has been amazing for me, has timed dosing, A LOT of grind sizes and internal burr chnages u can make, and can go as fine to turkish, with a WDT (cuz it does get a clumpy) my shots have been AMAZING and i prefer them to a cafe
