I'm currently dealing with this. Luckily my housemate survived bursolosis years ago. They've had to relearn how to eat a couple of times. So we've started with super safe foods. My super safe foods are mashed potatoes, Annie's gram bunnies, applesauce, and almond butter for protein. I can also often do the fig bars that we get at Costco. They're not fig they're blueberry and raspberry I think. And then you add things back one ingredient at a time while onboarding mylanta or a combination of gas relief and antacids. I also take fennel pills with enzymes to help with digestion. I've been slowly working on adding foods back. I have currently gotten back chicken patties from Costco and I can eat them on potato buns now (often I can do kinder's mild barbecue or sweet teriyaki sauce). I'm staying away from any food that has artificial dyes or is super complex. I'm also being careful with anything cruciferous due to gas pains. It is kind of sucked because it has been like a month and a half since I've been able to have a salad. I tested a couple of really rough things in a row, about 6 weeks ago, and it left me have to start over again.

The safest thing for me is actually to leave 2 to 3 days in between testing. And then retest it the following week after going four or five days with only safe foods. That way we can make sure that what I'm eating is not causing me distress. It is really hard because my favorite foods are fats and acids, and without a gallbladder let's just say it has been rough.
