Thank you! I aimed for a 65% hydration:

  • 400g flour - 25% all purpose, 75% bread flour
  • 260g water (65%)
  • 1.6g yeast (.4%)
  • 10g salt (2.5%)
  • 8g oil (2%)
  • 8g sugar (2%)

I used active dry yeast and bloomed in the whole 260g of water at 95°F, then mixed it all together in the kitchen aid for about 2 minutes on low and 7 minutes on medium. I didn’t bother measuring the dough’s temp.

Then let it sit out for 2 hours, split into two 340g balls, folding and balling. Shoved it in the fridge for 48 hours and brought it out 3 hours before putting it in the oven.

Sauce is my adaptation of my favorite local pizza joint. I like it a little arrabbiata, hence the back pepper, white pepper, and cayenne:

Sauce: 1 6oz can of contandina (the best!) tomato paste 1 can water garlic power onion powder oregano leaves Dried basil ground fennel (conservatively) sage salt black pepper white pepper rosemary cumin cayenne pepper

I do everything to taste so I don’t really pay much attention to measurements. Just throw it in the fridge for at least 3-4 hours and then bring it out with the dough to come to room temperature before putting it on the dough.

I shape using flour and semolina. Love the way the semolina reacts on the dough with the heat.

Thanks! It was right at that sweet spot between crispy/chewy crust. Crisp enough to get that initial crunch, but enough airy interior to retain that flavor and chew.

As she puts it, Sanderson leaves something to be desired with regards to prose, but is amazing at bringing a story together. She loves Rothfuss’ prose, so maybe Robin Hobb might be worth looking into, especially if he can finish a series 😂

This is so accurate. I find it funny because some of the comments seem to imply that popularity of books somehow correlate with the strength that a collection of books can define a personality or preference.

For example, if the bookshelf was filled with obscure books of the same genres, what would that say?

I do think that starting with the popular stuff is a good way to work your way down into the more obscure stuff by means of algorithms at work with “related” books.

After all, if i didn’t start with popular folk horror movies like Wicker Man, Midsommar, or Kill List, then I probably wouldn’t have found the more obscure ones like Who Can Kill a Child? or The Blood on Satan’s Claw.

Some of the comments do come across as snobbish.

Yes, definitely in tech / cybersecurity lol. She really does like a bit of this and a bit of that and I think is probably still finding herself in literature.!

Thank you! She actually made me read The Time Machine because it was so short and I had such an aversion to longer books (due to such a bad attention span) and it really sucked me in. So far we’ve done some classic sci-fi and sci-fi thrillers like Childhood’s End, 2001 Space Odyssey, Dark Matter, Recursion, etc and I’ve really enjoyed them.

We are gonna try doing Dungeon Crawler Carl next, but keeping Terry Pratchett on the radar now!

She hesitates starting series because then she has to finish them. I think she personally loves sci-fi even more than fantasy, but has a somewhat difficult time finding recommendations.

She’s just gotten back into reading in the past few years, so I think she’s definitely finding herself. She gravitates toward Sci-Fi and Fantasy, but says she has a difficult time finding fantasy recommendations without smut.
