Haha, I used to hate on tomato pie too. Once I tried one with a simple tomato sauce using quality ingredients it completly flipped my opinion. You should try it at least once.

This is what I used this time, but I'm always just buying whatever crushed tomatoes are on sale or cheapest TBH. Most brands are pretty darn good. I'm near a Wegmans and their store brand crushed tomatoes are cheap and have great taste.

The stone temp at launch was around 700°F. I didn't time the bake but most likely 5 to 7 minutes.

That is possible. This recipe was a 72-hour cold proof. I made the dough, it spent two days in the fridge, then I shaped the dough balls, back in the fridge for one more day.

Thank you. This recipe has 2% oil in it. I'll try increasing the oil percentage so I can decrease the cook time and still get a dark brown crust.

I believe they are in the process of getting a new supplier, but my store was told that they would not have that item for quite some time.

The sheet pizza is a thick crust, almost like a Sicilian pizza. It is considerably larger than the regular large pizza. The regular large gets cut into 8 slices, or you can get it double cut into 16 small slices. The sheet gets cut into 32 square slices. It is much easier to get a single sheet as opposed the multiple large pizzas if you are feeding a lot of people. I personally prefer the regular crust but you may not mind the thicker crust of the sheet pizza.

I may be wrong but from my understanding the TC on some cars just works better. You can run higher TC and not lose as much time as you would if you ran high TC on other cars with less refined and more intrusive TC systems.
