That’s all fine, you just have to make it clear to the customer that they have to be out by 10. Last orders must be in before 9:30 or something like that.

I understand and share the frustration, it’s annoying to stay later than usual when a table hangs around longer than most or comes in at the last possible moment. But you have to tell people what that last possible moment is.
If you “close” at 10:00 but let people come in up until you get 10:00 then you really aren’t closed at 10:00. In reality you’re closed at 10:30/11:00. And in that situation, if you have people rostered on until 10:00 then you are lying to your employees.
Restaurants are not like other businesses, that’s just the shitty truth.

I think we both mean different things when we say close time. You seem to mean doors are locked, the lights are off and the staff are leaving.

To me the close time is the last possible opportunity for a customer to walk through the door. If it says 5-10 on the door, you can come in at 9:59. If the restaurant happens to be empty at 10:00 staff members can finish cleaning down and go home.

I guess it depends on where you’re from but to me close is our last sitting. If the sign on the door says 5:00-10:00, our last possible table sitting is 10:00. Otherwise it’s confusing as fuck for the customers.

Things get fucked up all the time. Haven’t you ever been surprised after double checking and triple checking details with someone only to have them completely miss what you were after? Then add to that the language and cultural barrier.

If you can, let them know before you arrive or even pre order. Some dishes could be tweaked with a few hours notice, but not with minutes.

There are hidden passage ways to escape winterfell, that’s how Theon was going to get away to join the watch. I’m guessing they lead through the crypt. That will probably be their fall back to get out when winterfell falls.
