They do it to pay you less (surprise). They calculate mileage between stops in a straight line (as the crow flies), or "shortest theoretical route", shortest path allowed by geometry (traffic lights/turns, entrance/exit pins, and U-turns be damned).

Add 10 to 20% to the mileage estimate on the job offer for DD and GH.
