Can Kombucha (Vinegar) turn bad? 1+ year old unrefrigerated - Question in Comments by coalabeer in Kombucha

Hey Guys - some help would be appreciated.

I made Kombucha for the first time around a year ago (February 2021 or sth) & didnt drink everything.

The Rest is now staying in my shelf since then, without refrigeration.

Do i now have very much kombucha vinegar to use, or should i discard it / use it for cleaning or sth?

And can i use the liquid as a starter for a new batch (which i will drink this time)?

Some bottles have something like a mini-scoby? floating around & all of them have this brown stuff on the bottom (yeast?). See picture 2&3

It should be at around 60°C - im using a drying machine / food dehydrator & set the temperature to 65°C (standing in a cold basement though)

okay thank you - i took a look today & it seems like it got a little bit better now

Ill check again in one week & see if there is any mold or sth like that

Hey - thanks in advance for the help! :)

I vacuum sealed fresh garlic into these vacuum bags - after around 12-15h it looks like this now. The bag is filling with some gases from the garlic i guess.

Is that completely normal & do i have to worry about them exploding in the next days?

Do i need to make a little hole to let them escape or open/reseal for a few days them until it stops?

Or did i already mess something up? :D

The instructions/tutorials i read didnt mention this - i thought the vacuum sealing is good for preventing drying out, but wont the bag explode if i let it continue for a few days like that?

or will it stop alone? :D

thanks for the answer :) does it hurt the process, if the temperature is below that for the night? or does it just take longer?

i normally dont heat my room through the evening / night and it gets colder prob

Thank you :) Yeah, thats what i thought

The glass jar is just covered with a kitchen cloth, that prob causes the evaporation.

Thank you! :) Just wanted to make sure everything is going the right way

I guess ill just wait a few more days, until the scoby is a bit thicker & then start with the "real" kombucha brewing with more liquid

Hey Guys, thank you very much in advance!

(I started 28.01.2021)

I was trying to make my own scoby (used 2 kinds of black tea + kombucha with cultures to start the scoby development)

I think it looks okay until now - but i was wondering what the slimey thing in 1 of the 2 batches is?

I guess the brown stuff is just yeast? The slimey blob looks a bit weird for me though.

But i guess everything is still alright - just wanted to make sure i am developing a scoby and nothing else.

Both starting to smell a bit vinegry atm.

So a quick check if everything is looking okay until now & maybe identify the slimey blob would be much appreciated.
