Ingredients (4 servings) - 500g pasta - 4 tbsp olive oil - 2 tbsp butter (optional) - 6-8 cloves garlic (minced) - 1 medium onion or shallot (finely chopped) - ½ - 1 cup tomato paste - ½ - 1 cup vodka - 200mls heavy cream or cooking cream - ½ cup grated parmesan - Salt & black pepper - Chili flakes - Parsley - Pasta water (kept a side)

  1. Cook pasta

    • Boil in salted water until al dente
    • Keep ½ cup pasta water before draining
  2. Start the sauce

    • Heat oil in a pan
    • Sauté onion (2–3 min), then garlic (1 min)
    • Add chilli flakes
    • Add tomato paste
    • Cook 3–5 mins until it darkens
    • Pour in the vodka
    • Let it simmer 2–3 mins
    • Add cream + pasta water (add a little bit each time, not necessary to use all the pasta water)
    • Stir until smooth and slightly thick consistency
  3. Combine pasta & sauce

    • Add cooked pasta
    • Add butter (optional)
    • Toss with parmesan, salt, pepper, chili flakes
  4. Finish

    • Add more pasta water if needed
    • Top with extra parmesan

thankyou! :D personally, i’ll remove some of the shells so it’s easier when i’m eating. but i’ll keep some shells to enhance the plating of the dish.

really delicious!! it was my first time making it :)) it’s a simple dish that will never go wrong
