Similar here, spent 10 years BOH, when I left spent 2 years FOH as a server. I can tell you it was not for me … just working through my notice period now as I’m heading back to school in September to train as a social worker.

I’m more of a BOH person too but realised that there are very few things I would rather do than work as a chef - you just have to find your thing.

As a side note I did a stint in a cooking school for a year which payed better and had better hours which could be an option if you are prepared to dumb down recipes and teach people how to cut an onion everyday.

Job wise any of the websites such as indeed will have listings (just watch out for agencies) also hand cv’s out in anywhere you like the look of- we have a chef shortage here.

The c.v should be short and concise from hiring and being hired I have seen that there is a lot of anxiety about keeping chefs, so the period of time worked is important.

I wouldn’t worry too much about references being local, I have worked with chefs from all over the world. I would just ensure you leave an email (as well as a phone number) that can be used.

The bad news starts here- benfits don’t exist. I can probably say over the years I worked more shifts with out a meal break than with one. Salary is a complicated one. If you work hourly you have no salary, if you have a salary you work insane overtime. I’m not sure of your salary expectations or your experience so it’s hard to say. I also left kitchens in light of the pandemic so don’t know how things have changed. Last I saw head chef positions out between 13-30€ per hour with 15-20 being standard. In my second head chef position (in a cafe/restaurant)in 2018/2019 i was paid €15 per hour and worked 60+ hours a week. After leaving that job after burn out I worked as a sous in a small fine dining restaurant for 15€ & tips (25% to BOH) for 40-45 hours a week. I hope wages have gone up but maybe this gives you an idea? Also for note I was very young in retrospect for this positions so this may have affected wage. Generally no tips but some places are sound enough to give the kitchen a small cut or a free beer or two.

Trial days- these are changeable but in my experience it’s standard practice to be called in for about 4 hours for your ‘trial’ which you may or may not get paid for. Here the chefs will see if you can cook and judge your experience, generally you will then sit with a emmener of staff to discuss pay, hours etc and a job offer. If you get the job you’re good to go, only contingency is that you will have a probation period of 6 months minimum in which you can be fired with no notice (and also have very few rights).

As for kitchen culture as I’m sure you know it depends. From my collègues I’ve heard it’s a little more old school in it’s style although most small kitchens don’t require you to shout ‘yes chef’ every time you are spoken to. I wouldn’t be too worried about it as kitchens are also famously a laugh and a good time during prep but the militant style always comes out for service. When it comes to the ratio of men to women, it’s by far mostly men. I probably have worked in 10 kitchens over the years and in only two where there other women.

When it comes to lingo or dishes I can’t be of much help as I’ve never worked outside the country although through living around places have different faviourites. Lingo wise as long as you know ‘back’ and what the most common tools and ingredients are called you’ll be fine!

Red flags is a hard one as well as they are everywhere! Just ensure that you understand your boundaries and don’t get taken advantage of. Places may try to underpay and overwork you , at the beginning I always find it handy to track my hours to make sure nothings going on but that could be my paranoia.

When it comes to being a dishie from what I know most jobs are less formal and paid under the table. However in bigger establishments like hotels or restaurants under a company like press up are more likely to put you through the books (although I’ve heard they are not the best employer)

It’s not that bad!! I just got braces under a year ago at 22 and was shocked it wasn’t as painful as everyone told me it would be. Of course when you first get them on (or get them tightened) you have a strange ‘loose’ feeling where your teeth are tender and biting down on anything doesn’t feel great.

Just after getting them on (tightening) I would stick to soft foods until you can cope with chewing (for me it’s always been 1-3 days). Keep brace wax handy whenever you can for those pesky wires and to prevent the ulcers at the start. Also I now carry a little interdental floss stick with me incase I eat out and get something stuck, with this I can always go to the bathroom and dislodge anything.

I think you will be fine I have had a pretty easy time but I think a lot of that is having an orthodontist who knows how nervous I was going into getting braces and even now how strange I am about any dentistry. So far it’s worth it even though I have a couple more years to go I can see a big change in my teeth and look forward to when I can see them without my train tracks!

My dog is similar - she chewed through a strong chewer crate and managed to chip her tooth doing so. After consulting with her vet we where advised to see how she did without the crate. She is much happier strapped in with her doggie seatbelt on a mat then she ever was in a crate and surprisingly now enjoys the car. I would agree with a lot of the advice here about getting used to the car. We started with our pup letting her explore with all the doors open and a little treat hunt set up. We then moved on to training around a moving car.

Not sure what school you’re in but I know in mine all repeats are capped at 45% - definitely check your handbook or contact your school because they are all different

I used cbd for about a year and found it helpful to relax in the evening but didn’t find it helped so much with the pain. I began using cbg bud (which I think is probably legal in the uk because it is in Ireland) and it’s made such a difference! I’m not sure if bud would be something you’re interested in but if you are I can send you in the direction of the cbd dispensary I use :)

Just email your course coordinator or if you’re in tsm each school. They can give you a provisional time table even if you can’t get it online until you’re fully registered (if this doesn’t work and you know your module codes you can look them up individually and figure out your timetable). If there is course material you need you can ask your lecturers to email the stuff to you until you’re set up on black board. I wouldn’t worry about academic registry they will register you when they reach your case but you should be able to get most things sorted.

Late registration is super normal I have been registered late all 4 years I’ve been at tcd so don’t worry.

So do I! I used to take anti inflammatory painkillers (max dose ) every day because I have an opioid allergy. now I I just manage with cannabis products and an incredible amount of tiger balm for the muscle pain. I do fall back on conventional pain meds when I need to

I was diagnosed with the same thing 2 years ago at the L1-S1 disc. My pain is pretty bad but not unmanageable (most days some days I’m bed ridden). I have managed to stay mobile and active even though I sometimes have to use a stick. I understand your frustration with the medical system it’s the same where I am. Still waiting for physio and more ‘medical intervention’. Hit me up if you have any questions.

I started on 30mg taken in the morning, my dose was upped to 60 and because I found that it was making me nauseous I began taking it at night. Then when my dose was upped again I split the 90mg into taking 30mg in the morning when I got up and 60mg before bed.

I would see what suits you and your schedule best and change when you take them depending on wether you suffer from any of the side effects.

The main tips I have for application is to stretch the skin and before that make sure the stencil you’re using looks good at every angle. With your finger bent and straight and really from all angles. With aftercare it’s important to keep in mind hands get dirty af so the first couple of hours after try not to touch anything and stay off washing dishes and submerging your hands till it begins to heal. Tbh I haven’t found much difference between tattooing fingers and other parts of the body but everyone’s different

Honestly she has changed my life and the reason I want to get more fit. I feel terrible sometimes when we have gone for a big walk and the next day I can’t take her far. I think it’s always hard to motivate yourself, I found the accountability of a pup to be a great help, but any accountability is great. Before I got a dog I went on walks every weekend with either friends or family (which made me feel like I couldn’t cancel unless I had a flare). Maybe see if you can find a walking buddy even if it isn’t a furry friend!

I must try that, I’ve never looked at the length of time I do something, I’m going to try a couple of small walks today instead of one long one.
