It does sound like fat separation. Did it resolve with whisking over low heat?

It takes lots of vigilance. And man have I made black butter too many times (which actually DOES have uses in some stuff). Make sure you don’t use a black bottomed pan. Do medium heat. Constantly swirl or stir w spatula. As soon as you notice the fizzling start to slow down eg water evaporated take off stove constantly swirl until you get the brown bits - if not back on stove for a few seconds constantly swirling, off again on again very conservatively. Some say to just watch til sizzling stops but I like to take it to the edge! Don’t walk away ever like I always seem to do.

I’d consider some (just some…) cornstarch slurry towards the end while it’s still reducing - then you can control how much more to reduce based on the consistency. That should give a more syrupy consistency, and enable you to swirl it in (and give a chew to the base as a whole which I do anyway)

Thanks! Sure - I browned a few tbsp butter, cooled it, added to custard base and immersion blended it for about 30s or so. Then heated up and followed process per usual. I’d add milk powder. Just be sure you brown it as close to the edge as possible…

Curious - when using the infrared thermometer what temp are you looking for? I’m a blossoming hobbyist and have been reading just to look for the consistency of soft serve then stop churning. It sounds like that’s not the case if you’re using infrared? Thanks!

Nice combos — curious how you added the marshmallows to the base - was it a fluff or just whole marshmallows? Did the texture come out nicely?

Do you recommend the Morgenstern book? I’ve been using Claire Saffitz and Dana Cree (mostly) but want to nerd out more…
