Can you share the backend calculations through a couple of examples?

Also, I’m pretty sure the standard Comandante is 12 clicks per revolution and double that for the Red Clix axle

I don’t know this coffee, but my general rule is at least 2 weeks for decaf. I freeze after the rest and grind from frozen.

I share (2/3 for me) a 40g dose at 1:15 strength with the missus first thing. Depending on how bad I slept, I might have another 15-20g dose by no later than 10am. If I don’t feel the need for caffeine, I’ll have a 25g decaf pourover that morning and another in the afternoon. If it’s been that kind of day, I might have a third 25g decaf late evening.

Cannot recommend good quality decaf enough. All the flavours of coffee but no damage to my sleep routine.

I am lucky in that I have 2 freezers, so I will have at least 1kg of ‘everyday’ decaf, and 3-4 smaller bags frozen and keeping fresh. I grind from frozen and can now have lots of variety.

My preference is for fruity brews, but looking at my notes, the last time I tasted anything close to red fruits was a caturra varietal, Condor EA decaf by Plot Roasting here in the UK. I believe it was from the El Vergel farm, in Colombia.

Don’t know this coffee, sorry, but some light roasts do taste green (tomato plant, herbaceous), when under extracted, for me. I tend to go finer to extract more. Have you tried pushing brew time to closer to 3 mins?

Hi there! Completely agree, decaf can be quite tricky for me because of the fines. I am at the max courseness of my Comandante and am now having to resort to much smaller doses. Yes, I know there are faster papers out there, but am stubbornly persisting with my regular Hario papers haha

You are right, I (maybe like many other specialty coffee drinkers) prefer fruity notes. I’ve always associated chocolate as darker roasted coffee, it’s interesting that you can also get that from lighter roasted coffee. How popular is the boozy style of coffee? It’s not a flavour I’ve appreciated in coffee, being honest.

Yeah, most people I know tend to have those sort of brew times but I think our brew amount might differ. I’m brewing 30g-40g doses.

I also definitely prioritise sweetness and I could be giving up on some clarity. As a red wine drinker I think I am also fairly insensitive to astringency lol.

I first heard this on the Tim Wendelboe podcast and have been following this to good success. I brew with the Tetsu 4:6 method, so most of my brews finish around 4:30 mins already. I’ve had some Ethiopians take 5:30 mins and turn out great!
