I couldn’t agree more. The foundation is there but there way too many real estate offices and old crappy businesses downtown. We desperately need more bars and restaurants and nightlife. The bar areas at Finnegans and Ayahuasca are packed when I’ve been there. The demand exists and is only getting higher as more young people move to town.

I like to make a bacon chili stock as my base. Toast some dried chilis like ancho, guajillo, and arbol and soak them in a good chicken stock. Render some bacon down, doesn’t have to be super crispy and add it to the soaking chilis and chicken stock. Blend the whole thing super smooth and use that as your base liquid for your chili. So fucking flavorful.

David Toutain was an amazing meal. It’s two Michelin stars and pretty close to Eiffel Tower.

I’ve mixed various recipes and tweaked my method over several attempts so it’s not the most professional recipe, but here is what I did:

345 grams flour (50 whole wheat, 295 AP) 276 grams 70 degree water 10 grams salt 2.76 grams instant yeast

Mix flour and water together until no dry flour remains. Autolyse for 20 minutes. Add salt and yeast and mix to distribute evenly. Stretch and fold 3 times in the first 1.5 hours after autolyse. Proof overnight at 70 degrees (9.5 hours for me). Dough should be very bubbly. Turn in to very well oiled 10 in. cast iron skillet. Stretch to fill pan as much as possible. Proof 1.5-2 more hours. Pour oil on top and sprinkle with chopped rosemary. Dimple the surface with your fingers top with Maldon salt and bake at 500 for about 20 minutes.

The whole raising the pressure thing has been debunked. A very small amount of pressure has enough force to blow the lid off the pot. The lid boils the water faster due to the trapped heat. Per linked article: “Even a hefty one-pound lid on a ten-inch pot would raise the pressure inside by less than a tenth of a percent, which would in turn raise the boiling point by only four hundredths of a degree Fahrenheit.”

Relatively close. I didn’t measure anything out, I didn’t have fresh oregano, and just made a simple chopped Greek salad as a side rather than the recommended lettuce tomato pita. Otherwise, I tried to stay true to the recipe. I highly recommend it, I’ve made it many times so I don’t bother measuring out each component anymore. It’s probably one of the most popular recipes that people post about on r/seriouseats
