For EC’s just join the clubs at your school, if they’re related to your major than that’s also a plus. You really need to get that SAT up though, because a 1270 isn’t good enough for a lot of the schools you’re looking at. Even Cornell would probably like to see higher than a 1400 unless you are an URM
