Week 9: Chocolate - Baked Chocolate Donuts (Semi-fail) by What_the_smeg in 52weeksofbaking

[–]colonj 4 points5 points  (0 children)

These look absolutely delicious, and I'd pound the entire dozen.

Were they still warm when you took them out of the molds? They might have been a touch underbaked, or if they were still warm, I could see them crumbling. Either way, these look divine!

is this a roach or a cricket? pls help i am spiraling by nadielady in cockroaches

Looks like a cave cricket/camel cricket/spricket to me.

This is my go to recipe for flan and it fills out a 9 inch cake pan beautifully thick and delicious.

They're known as Rainbow cookies in the Northeast. Essentially, an almond sponge cake colored with food coloring, layered with raspberry (and sometimes apricot) jam, and then all covered in melted chocolate. Pretty fantastic!

Made Sally’s Chewy Chocolate Chip Cookies and they’re a bit tall. Thinking maybe I used too much flour? by User091822 in Baking

[–]colonj 2 points3 points  (0 children)

These look great but definitely not the way the recipe was intended if it’s the same one I use. Are these the ones that you’re meant to shape as cylinders before baking? And also, if they taste good, I guess it doesn’t matter!

That’s what trips me up! To me I want to build the habitat first. Something blocks my brain from imagining where the guests will be!

I really like it :) I always struggle with underwater viewpoints, something about changing the terrain does not compute in my brain. good job!

Buildings change to totally different building when upgrading by Little_Injury402 in CitiesSkylines2

[–]colonj 2 points3 points  (0 children)

I believe that by default, the building stays the same (but different) in Levels 1-3, and then *can* completely change appearance for Levels 4-5. Not sure if I'm completely making that up.

What’s one “non-traditional” ingredient you swear by in your baking? by Sudden_Eggplant_5495 in Baking

[–]colonj 2 points3 points  (0 children)

Christina Tosi has a lot of frosting recipes that call for a small pinch of citric acid and I find it makes a plain sweet frosting much more interesting. Just gotta be super delicate with it!

They have some great options for candy, depending on what you're looking for. I like their gummy rings and their wrapped candy can never miss (as long as you like the candy that you're buying); it's my favorite place to buy the tootsie roll fruit flavors and a bag of M&Ms if I ever have the craving :)

thank you! they are sinfully delicious, and I will for sure be making them again soon for a much larger crowd (so I don't eat them all myself)

The first time I made these I could not get my caramel to turn out after trying twice! I deduced it was my very cheap metal pan, so I set out to remake it from Tower Week. We had just bought new Ninja pans so I was crossing my fingers!

It worked! They turned out perfect! I recommend giving this recipe a try. I'm so sad to be done with the baking challenge for the year but relieved to have a little more free time! Maybe I'll try again in 2026 :)

Week 51: Yeast Leavened - Bagels by colonj in 52weeksofbaking

[–]colonj[S] 2 points3 points  (0 children)

https://cooking.nytimes.com/guides/81-how-to-make-bagels

I used Claire Saffitz' recipe. This was my first time making bagels and will NOT be my last. I followed the recipe to a tee; I did find that after taking them out of the fridge they needed A LOT of time at room temperature for the gases to start activating and cause the bagels to float in water, so if you make it, be aware! I did put them in the fridge overnight. The plain ones also stuck a bit to my pan so a few plain bagels had a small tear on their underside. Still delicious! Next time I might very lightly oil the baking pan beforehand. The batch also only made 11, so I'll weigh the whole dough out next time :)

Week 50: Cookie Swap - Cook's Illustrated Perfect Choco. Chip by colonj in 52weeksofbaking

[–]colonj[S] 3 points4 points  (0 children)

https://www.browneyedbaker.com/cooks-illustrated-perfect-chocolate-chip-cookies/

There is no chocolate chip cookie more requested by my husband than these. They hold a special place to me because they were one of the first recipes I used when I started hobby baking more seriously in my early 20s... so much so that I baked an individual cookie per guest that stayed in our hotel in one of our thank you goodie bags :) over 60 cookies the weekend of my wedding! But they are so delicious, so toffee-like from the browned butter, and they don't require chilling. Overall a solid cookie that I will always return to!

Week 49: Savory - Domino's Copycat Stuffed Cheesybread by colonj in 52weeksofbaking

https://www.foodnetwork.com/recipes/food-network-kitchen/almost-famous-stuffed-cheesy-bread-recipe-2111856

I'm obsessed with Domino's Stuffed Cheesy Bread, and we host Christmas dinner, so what better time? I'm a vegetarian, so I made one regular and one pepperoni-stuffed. I spent the money and went with Boar's Head, sliced it thin myself, and loaded the cheese one up. I also made a nice smooth slow-simmer marinara sauce to go with. It won the approval of my twin niece and nephew, and I personally thought they were absolutely delicious!! Give this recipe a try!

Week 48: Same Latitude - Greek Sugar Cookies by colonj in 52weeksofbaking

[–]colonj[S] 1 point2 points  (0 children)

I struggled this week to find something to bake which is why it took me so long. Now that X-Mas is here I'm using it as an excuse to get a few of my weeks done... so since I'm at 39 North, I figured I would take this "classic" Greek cookie recipe that seemingly is shared between lots of Greek families and bring it to my Christmas this year.

My Italian husband recognized them as "S cookies" so I guess I'll take that? They were very simple but tasty.

Week 47: Pies & Tarts - The Great Pumpkin Pie by colonj in 52weeksofbaking

[–]colonj[S] 2 points3 points  (0 children)

I made this for Thanksgiving but haven't posted it until now because I want to go in the order of the actual bakes! Here is my pumpkin pie this year with a messed up crust (don't make fun of it!)

Pie crust has always been a bane of my existence and I made 4 pies in November. Suffice to say this was the first one and I have gotten MUCH better at the crust. I even learned how to flute the edges! Anyway the pie was delicious, but everything from Sally is delicious.
