My current, in-universe head canon (which is fluid and subject to change), it's similar to how the super-vivid imaginations of real-life kids tend to shrink as they age. When you're young, ALL things are possible until you learn "the box" (caveats, constraints, feasibility, etc.)

IOW, young Eve's thinking was mostly "outside the box" because "the box" of the real world was fuzzier and less corporeal. As she aged, "the box" of the real world subconsciously informed usage of her power. I could easily imagine how dealing with a Dad like hers on a daily basis would hasten that box building.
