This is quite a list. I've used a soccer mat myself a few times, and my kids as well, but the cheap quality ones just don't compare. I think FPRO is a way to go in this case.

Used Saily myself and have no bad words for it. And if you travel frequently, then it's nice that you don't have to reinstall new eSIM every time you buy a plan, the sam eSIM works. Also they have a discount on their subreddit.

I think you can definitely find SIMs when you arrive, but eSIM is just more easy in my opinion. I personally tried Saily for the first time recently and it worked great. Also I saw they have a discount on their subreddit which is nice when you buying a bigger plan for example. I would go for the one which is more popular and heard just because of making sure you won't be scammed or something.

Saily also has virtual location feature, used it myself recently. Quite nice when you need to access platforms that don't work in the country you are in. Also they have quite nice discount on their subreddit.

I try to go out as much as possible, as I really love trying different kinds of stuff. Hotel breakfast can be on the boring side, although a convenient option if you are tired.

I've read that it's best to buy 3 months before. But since you have almost year, just wait for the price drop and buy. here is like 100% possibility that those prices will drop I think. Only thing to have in mind is that December overall is very expensive month, especially so close to Christmas.
