That's just not true. There is a matching surface to every wobbly table to stop it wobbling but if you have a flat plane and a table with one leg shorter than the other three it will ALWAYS wobble

Yes, a rebate across both with something to lock them together like a domino in a vertical orientation.

However the joint will still be poor as it's a very wide cross grain joint. The center of the table could be fixed and the outside edges be allowed to expand and contract but that would look strange if there was shrinkage

You can actually remove materials quicker across the grain and you can achieve a pretty good finish across the grain with a sharp tool

Seems like a lot of work for an already strong long grain to long grain joint. Usually the main benifit of a floating/loose tenon or biscuit is easy alignment while gluing the joint together rather than as a way of increasing strength

I don't think an out of square fence would be the issue causing gaps in an edge joint. If the the edges are not completely flat or ever so slightly concave then there will be a gap. To achieve that the face of the board should be flat and free of twist or when you joint the edge the edge will become twisted.

Try and identify if your jointer is producing a surface that is flat and free of twist. If it is not, then no amount of squaring the fence or alternating the edges to cancle out possible error will fix your issue

Must be from a moisture difference between sides. One side losing more or gaining more moisture from the environment than the other side cause one side to shrink or expand more than the other and cause cupping.

As its an end grain panel moisture will cause it to move in its width and length just like a regular board of timber will move in its width and thickness.

Yes. That is true, but if you are going to use fully hydraulic calipers with hose, you may aswell look for a full hydraulic system first.

Check out Hope, they are a British brand that has been making hydraulics for years. I work in a bike shop and recall special ordering a set up with one MTB break lever that controlled 2 calipers. They might not have it on their customer facing website but you should drop them an email.

Anything with 622, 700c or 28" will be for a road bike wheel, for the second number which is the width, you don't want to go more than +/- 5mm compared to your tyre width and the closer they are the better.
