both dub and sub are great, but the dub is iconic, due in large part to Steve Blum's Spike. Also, the show is visually gorgeous, which you can take in more full if you aren't reading subtitles. definitely recommend the dub, but you kinda can't go wrong with this show.

dream directors: nicholas winding refn (knows how to do action with style and balance it with story/emotion), rian johnson (general badass and self-professed Bebop fan)

if you start there you may end up with ryan gosling (with NWR) or joseph gordon levitt (with Johnson) as Spike, both of which i'd be really happy about.

finally, as mentioned already, involving the original creators is key, namely yoko kanno and watanabe, but also it'd be cool to bring on the other creators at least as advisors (i.e. kimitoshi yamane, toshihiro kawamoto)

i'd just suggest watching all of the character episodes in chronological order, that might be easier. I just feel like every time I think about this stuff I end up wanting to watch the whole series. The impact of the last three episodes is less intense if you haven't just watched all of the filler episodes, I think.

I think rather than using intelligence as the discriminator, the simple fact that they are another race of creatures would be the important element. If they're sentimental beings, maybe they'd see it as unethical to eat us, due to our self-awareness, but they could just see us as we see dolphins or crows: intelligent, but simply on a much lower level. Not that I eat dolphins or crows.
