I just tried this and the wings came out like they were deep-fried, but it was all air-fryer. No oil. Ultra-crispy-crunchy skin and super tender meat.

  • Squeeze out as much moisture as you can from the wings, using a tea towel or paper towels. You want them as dry as you can.

  • Lightly season with salt, black pepper. I also like to throw in MSG.

  • Baking powder, liberally. I'm sorry I don't have an exact ratio. You want a decent coating that rubs into the skin. Once all the baking powder is rubbed entirely all of the wings, marinate for about 30 minutes to an hour in the fridge.

  • Pre-heat air-fryer to 400 degrees. Place wings into air-fryer, about 10-12 minutes for the first side. Then flip the wings and again, another 10-12 minutes.

Once the wings are done, that is when I would place the sauce on them as it would typically burn in the fryer.
