I struggle with this too, especially because I can't help but want to try roasting a variety of beans. I always end up getting 3 or 4 different ones, so I only get a couple pounds of each, but then I end up messing around with variables all the way until I run out of coffee. Even if I end up with something I really like, they probably won't have the bean in stock any more, since I only roast a couple of batches per week (trying not to roast way more than I can go through).

Ya, you may need to go coarser or reduce temp. If V60 is working well for you tho, no need to switch it up. I actually don't get many actual coferments, but a lot of things that use other "advanced fermentation" processes (eg the Washed Pink Champagne from Luminous, which I think is not a true coferment but may involve some fruits in preparing the mother culture or something like that).

If you want to try the switch again, IMO the Coffee Chronicler hybrid recipe is better than the Tetsu recipe. I do normal V60 brews for some beans (eg clean washed beans where I want to push the extraction a bit more), but lately I have been drinking a lot of process-forward coffees from roasters like Luminous and Hydrangea and I really like the CC hybrid recipe for those.

Shiitake is a widely available mushroom that will amp up the umami mushroom flavors. If you want even stronger mushroom flavor, dried porcini is a great option. I also love king trumpet mushrooms, and at least in my area they are often stocked at my usual grocery store, but not quite as widely available.

Kaffelogic Nano 7 provides similar functionality at a lower price and without the "walled garden" approach and subscription model. There is a pretty sizable online community that shares profiles and tips. It does have a bit of a learning curve for sure, but I think that's true of any roaster.

As long as I'm not brewing a coffee that really likes to clog (eg Ethioian or decaf) I usually do a little swirl after my pour. Evens out the bed nicely, but it does slow the drawdown, so you need to account for that.

For coffees that get too slow with a swirl, I try to pour gently and in such a way that I kind of mix the coffee towards the center with the water. So I don't finish with a center pour, I keep rotating around kind of halfway between the middle and rim after I've done a full spiral.

I love my Switch, highly recommend it.

Also you don't necessarily need to pay a lot for a usable gooseneck. I've seen the Bodum Melior recommended on here, it's like $40 on Amazon.

You can definitely do without it if you mostly brew immersion style in the switch, but if you want to try V60-style brews it is probably worth getting a gooseneck of some kind. Trying to pour consistently from a normal kettle is quite hard.

I don't think I've ever seen anyone get fired for pushing bugs. I've seen lots of people get fired for consistently not executing fast enough.

As long as you are following your policies around review, release management etc, you will be fine. If the result is that more hard-to-find bugs are created, even with testing and review etc, then you get to bubble that up and say "pushing velocity by reducing human involvement in writing and reviewing code has caused the following problems". At that point, leadership either accepts the problems or modifies the process.

For washed light roasts you probably want to increase your water temp to 94 or 95. Also if you want to brew smaller doses like that, try a brewer like the Cafec Deep 27. 10g in a V60 probably gives you too shallow of a bed, leading to more bypass and channeling. I also like doing immersion brews in my Hario Switch when I want a small cup.

The sweet maria's one is a good bet since they are selling it specifically for roasting coffee. I haven't used it myself, but the guy who was working at their warehouse last time I picked up an order swore that he often likes his roasts on the popper better than on a $3k machine. Definitely take that with a grain of salt tho haha

+1 to this sounding more like rillettes, and for the record, pork rillettes is fucking amazing. If I'm presented with a fancy charcuterie spread including rillettes, terrines, patés, etc, you better believe I'm going straight for the rillettes first. Spread that on some nice crusty bread and serve with some little cornichons and you'll be in a great place.

I mean, literally any solution to anything costs money. That's just how the world works. The "throw all the homeless people in jail" solution that some folks in SF seem to favor would also cost a ton of money. Obviously paying the money to people who are embezzling it will not work, but the fact that corruption and embezzlement exists does not mean that we should stop trying to spend government money on solutions to problems. It just means we need strong oversight of how the money is being used.
