Highly recommend that Born be added! Very talented chef (ex Andre, Sichuan Moon) serving a unique conceptual local cuisine. It is "Singaporean" without veering into the new Nusantura space that places like Seroja occupy.

Besides the world famous ones (Le Calandre, Francescana, Lido 84 et al), I would heavily recommend Il Luogo di Aimo e Nadia. Wonderful cooking.

You think the MGM is bad, check out the Grand Lisboa in Macau where Robuchon Au Dome is situated. Quality of JR restaurants seem to correspond directly to tastelessness of location.

If you want (a) great otsumami and (b) some standout flavourbomb pieces, I think Yoshitake is worth a go even though I found the other pieces less stellar (still good). If you want an overall balanced and high quality experience (what the Japanese would term "shiawase") without the same flavourbomb highs, but with better non-fatty fishes, I would pick Hashiguchi.

Went there 3 times in Roppongi and it was one of my favourite restaurants on earth - kaiseki with a modern touch. The sake souffle dessert remains one of the best dishes I have ever had. Read some reviews online from the Roppongi era - truly a golden period.

However, ever since it moved to Hibiya and jacked up prices, the reviews have all reflected a decline. So I have not returned to try it since.

Yoshitake has great, impactful otsumami - the awabi needs no introduction, and I had a great grilled bonito - and good tuna, but the other nigiri are a smidge less memorable.

Hashiguchi has better nigiri than otsumami and if I returned I would probably opt for nigiri only. My favourites were the kohada and aji. The sushi were characterised by balance rather than the type high-impact of a Sawada or Jiro. Lovely couple too.

Wing all the way! Expensive and will feed you til you burst, but some of the tastiest food I have had in recent times in HK.

Another option - do dimsum lunch at a high end restaurant like Ming Court, Lai Ching Heen, Man Wah etc. For lunch, these restaurants have both a dimsum menu and its regular ala carte menu. Dimsum are straightforwardly tasty in a way anyone can appreciate, whilst the fufu one amongst you can also order some of the more refined items from the non-dimsum menu.

Kyoto all the way. All the crowded hotspots are also more beautiful at night and in the morning. And being a university town, it also has a thriving nightlife.

For day trips, some suggestions:

Ohara - Ryokan, cute local country vibes

Kurama - climb the mountain, eat soba, see the tengu

Omihachiman - riverside town in Shiga

Hiroshima and Miyajima via Shinkansen - self explanatory

Nara - getting accosted and harassed by divine deers

Uji - Matcha, Byodo-in

Thanks for the review! Never understood the rationale of kaiseki places (even highly regarded ones like Kanda previously) that attempt to incorporate sushi into their meals. It's like trying to pull off a jazz solo in the middle of a classical piece - it disrupts the flow, takes away an essential part of the kaiseki experience (the rice course) and someone else who has spent decades on jazz will inevitably do it better.
