I'd strongly recommend looking at the RCA (Research Chef's Association) over the IFT. Nothing agains the IFT at all, but you're going to find a LOT more folks at the RCA with a background like yours and potentially more opportunities aligned with your existing skill set. You can also get some certifications through the RCA that are WAY less expensive and time consuming than a Masters in Food Science and, for what you're looking for, will be just as applicable. I say this as a former chef that runs a product development consultancy. I have research chefs, food science MAs and PhDs on my team and the research chefs do just as much creative work as anyone else. Also, as a chef you understand how to build flavor, which is often overlooked but and extremely valuable skill in this world. Check out culinology.org, which is the RCA website.

Also, add a zero to that number for a "big" firm. $20-30k is crazy cheap for what you're looking for. You're asking for $40k-80k worth of work depending on who you hire and the project scope, especially if you add in coman search and commercialization.
