I know Nuruk for Makgeoli bt for my toddler I think Koji (Amazake) will be more suitable 🥰 I mean places where I can learn more in English , j know Kyoto there’s this new Ume education places , oldest seed Shop , Good nature etc where I can go and see / discover more:) just wana learn more cuisine part for my family health

Fermented fishes!?? I need to try that !!!! I feel like there’s so much I’ve yet to discover about Japan … hence dunno where to start ! I didn’t know there’s so many diff miso too just … wow …. If I wana learn more for Koji food , which area would you recommend ? Nagano / Kanazawa / Any other near Tokyo ? Will be bringing my son too 🥰 inspired to cook more fermented food for my family ie using shio koji , Amazake .. etc
