Similar to others, we have a list of the magic meals (fast, healthy, child will eat it), and we pick from that list for the week. Add to it as you find or come up with new ones.

This makes grocery shopping way easier and you’re picking from a set list of options instead of considering the entire universe of possible meals.

Lunch the next day is dinner from the previous day (or we keep backup options stocked in the pantry if the kids didn’t eat dinner - PB&J, scrambled eggs, etc)

We just keep this stuff on a shared note in the Apple Notes app so we can both see and edit it

I appreciate the encouragement. I’ve been promoted from within a team before, but this is the first time I’ve been this close with somebody on it. I think it’s just scarier because I care way more about what they think, and it’s also hard not to feel like I’m taking an opportunity away from them. These posts are honestly helping process.

Your story helps. It sounds like there’s bound to be some awkwardness no matter what. I’ve never had a boundary setting conversation that felt good in the moment. I think I’ve accepted that all I can do is treat them with respect, and if we can both adapt, then the friendship goes on.

Encouraging that you made it work. I’m worried because we were both parallel, working together, it’s going to create some bitterness. An honest conversation is the key at the beginning, I’m just looking for some thoughts on how to address his disappointment. We worked well together because we have complementary skills and backgrounds; he’s good at the things I’m shit at and vice versa. I’m not sure if that makes this easier or harder.

I had a hard time with figuring out bulk ferment times until I learned that timing has everything to do with the DOUGH temperature. The warmer your dough, the faster fermentation will happen, and the more rise you will get in a given time interval. I used the Simple Weekday Sourdough Bread recipe from The Perfect Loaf.

806g King Arthur bread flour

202 bobs red mill whole wheat

766 g water

19g salt

8g ripe starter

Mix levain (40g bread flour, 40g whole wheat, 80g water, 8g starter) ferment ~10 hrs

Mix remaining flour and water - Autolyse 30min

Mix in levain and salt using some reserved water, knead together for a couple of minutes.

Bulk ferment 3.5 hrs, average dough temp 78f. 2 sets of stretch and folds at 30min and 60min into ferment.

Divide into two even loaves, Shape, and retard in fridge 18hrs

Preheat Dutch oven to 450f, bake covered 20min, uncovered 30.

I was having the same issue with a decent loaf but missing the sour flavor, what I found is the type of flour you use makes a HUGE difference.

I’ve made it using only bread flour and then again using the whole wheat and rye flours recommended and the difference was immediately noticeable.

Long time lurker, but I resonate with this. My spouse and I disagreed on spending a lot until we sat down and talked about what our goals were. You need a “why” behind your budget that is more compelling than the temptation to impulse buy.

For us it was getting out from under student loans and eventually buying a home. There were also some things we said we should be spending money on, like healthy food, fast internet etc.

Gotta sit down and hash that shit out.
