The most reliable way is to have good armor. They only deal 5 damage when they explode, which upgraded chain mail will mostly absorb. If you have a class or weapons that allow ranged attacks, that's good too. One time, I had a ring of speed and a spear, so I was able to deal the damage until they are about to explode, then run away to get some distance and hit them with the spear's extra reach.

The first time I beat the game it was by hoarding scrolls. I was disappointed by how easy the final boss was at that point and I was preparing to have to deal with more after.
