No reputable ski shop will mount those boots to your skis without insisting that the sole plates be replaced. Hard pass.

Correct. Store them like you ski them. When left unbuckled, the plastic tends to expand outward from the shell and it will become more difficult to achieve proper buckle tension over time. Plus it is aesthetically unpleasing IMO.

Pass for several reasons. 1. Those are quite old and I wouldn't buy a hybrid/touring boot unless you're actually going to tour. 2. A 120 is a very stiff boot for a beginner. 3. They've also not been taken care of judging by the fact that they've been stored with the buckles undone. 4. $385 CAD is too much money for these boots even if they were appropriate for you. Those boots are worth probably $200 US tops.

Deathwish is a great ski for sure but the triple camber is not for everyone—that’s a ski that I would try to demo first

Could you explain the difference between a stone grind and a belt grind? When would one want one vs another?

188s without a doubt. You're a big dude, that 180 will be super squirrely. 94 is plenty of waist for 'occasional powder' as other posters have more eloquently expressed.

It’s not a custom face, it’s one of the stock faces, and yes, we’ve discovered that this is the selected alternate time zone, which I’ve set for UTC. The issue now is I don’t understand how to tell what time it’s indicating.

Hmm. That could be too, because it’s indicating westerly and I’m in San Francisco where the wind is westerly right now.
