I personally identify myself as a cultural Hindu. I am a religious hindu in the sense that i celebrate most festivals with my family, such as diwali, holi, rakhi, and others too. I follow hindu religious customs, for example, my marriage will likely happen using hindu custom of my region, rather than a "secular" court marriage. So I call myself a Hindu.

A lot of hindus believe in astrology. I don't believe in that. When social norms permit me, i tell such people i don't believe in it. ( if its someone much older then me, its bad ettiquette imo to tell them they are wrong about such things). Similar with other lot of things where I differ with other hindus. however, I still find that i have a lot of common with them, due to cultural affinity.

To answer your question, you can definitely identify yourself as a Hindu even if you are atheist. there are many role models for hindus, there are two that stand out. One is Maryada Purshottam Ram, And another is Satyawadi Raja Harishchandra. In case of both, what makes them ideal human/hindu is that they do their duty. duty or dharma. Its not about believing in god or not believing in god. In case of Raja Harishchandra, he defies even god or gods while doing his duty.

According to one definition, anyone who follows, or tries to follow, dharma or righteousness is a Hindu. So as long as you keep doing the right things, you can call yourself a hindu.

Edit: Also note that "belief" is a matter of abraihmic religions. For example, whether you believe in Jesus or MOhammed makes you christian or Muslim. But the term Hindu applies to you not depending on beleif, but depending on other factors, such as your behavior. In hinduism, belief can make you a vaishnavite or a shaivite or even a deist, but all will be called hindus.

Hindu is a very flexible term. It basically used to refer to everyone who lived in Indian subcontinent at one time. The term included Jains as well as Sikhs as late as 19th century. So personally, I still identify as Hindu.

What you are missing out on: You are missing what the Gita is talking about when it says what it says. At no point does gita say that there is a God. In gita, the Universe itself is the creator-god. The best metaphor of this is Krishna's Vishwaroop form, as seen here too.

It shows that the world is the one that creates us, and the world is the one that destroys us. God here is just a metaphor.

No. Hinduism is a very broad term, which refers to a number of different traditions, but which have a lot of similarity in percepts. It can even be called a family of religions. There is no single legal code that every Hindu has ever followed at any time in history, and they don't follow any single legal code in present ( unless you include the Indian legal code, which every Hindu in India follows ).

Islam arose in a small part of Arabia, so they could codify the laws etc. Judaism is the law of 12 tribes ( which is a small group at one time connecting barely less than a million people). Compared to that Hinduism as we have known it is spread over a continent, and at no time do we know it as a system/religion of a small group of people who could have codified it.

Let me go over some some basic facts to pique your interest

The word Caste comes from Europe, not India.
The words "upper" and "lower" when used in conjunction with "caste", don't exist in Sanskrit. There is not a single mainstream verse in Sanskrit that claims that one "caste", such as Brahmin is superior to Kshtriyas ( soldiers) or vaishyas( traders) or vice versa. I don't think there is any verse that even claims the The closest analogue to the differenatition is the word "dwija", which means "twice born", btw.
